Mustard seeds - Rye - Rai

They are generally black but can be brown also. It is a very essential spice in Indian cooking. It has a very strong flavor.
The seeds are put in hot oil till it crackles and then other ingredients are added. These seeds can be used for garnishing snacks.
They act as excellent emulsifiers in salad dressings. Generally used in all Indian food and pickles.
